Colombo Dusted Salmon


In my kitchen, I blend spices unique to Northern Africa, the Caribbean, South America and the Low-Country to add new excitement to familiar foods. Colombo Dust is one of my favorite spice blends, and it turns salmon into mouthwatering magic.

Serves 4


4 tb canola oil
¼ cup cumin seeds
2 tb coriander seeds
1 tb yellow mustard
1 tb whole cloves
1 tb red pepper flakes
5 tb ground turmeric
2 tb cinnamon
2 tb ground ginger
2 tb garam masala
1 ½ tp celery seeds
½ cup unsalted sunflower seeds
4 salmon portions 8 oz pcs


Mix spice mixture together. Dredge salmon in spice mixture. Place oil in sauté pan over medium heat. Place salmon in pan spice side down and cook for 3 to 5 minutes (depending on the thickness of the fish). Turn fish over and cook for another 3 to 5 minutes. Serve.

Note: I placed this salmon on a bed of spinach and kale tossed in some canola oil and balsamic. You can use any type of greens you wish to make this a light, healthy dinner.
